this week's meal plan


Well, I am a bit late in posting this one as I need to make a new meal plan in a couple days, but I figured I would post it anyways.

Thursday: Sushi with carrots, avocado, cucumber, pickled ginger and toasted sesame seeds. A summer favorite, but we had all the ingredients, so I figured it would be easier than heading to the store. We use this recipe for the rice (I usually halve it and use less salt).
Friday: Roast chicken with potatoes and carrots and challah. We eat this almost every Friday for Shabbat. And an almond cherry tart for dessert.
Saturday: We were out hiking all day, so I threw together some nachos for dinner. Quick and everyone loves them as a special treat.
Sunday: Matzo Ball Soup
Monday: Pasta with this sauce and ricotta with roasted broccoli.
Tuesday: Mujadara with sausages, yogurt, and kale with roasted beets.

I had to include two portraits of each of you this week, as I couldn't decide which ones were my favorites. An adventure this weekend to one of our favorite places. We hadn't been since last Spring and before Shosh could walk, so this trip was quite a fun trek this time. We climbed to the tippy top of the mountains and played in the ponds. We collected treasures and scrambled up rocks. The wind was blowing but we leapt across the high rocks, and basked in the moments of sun. This place inspires play and excitement and good times like almost no other.

S: you call all birds (except chickens and crows) "owls". you are now speaking in sentences. you are so loving and sweet, giving everyone pats and kisses. you give the best, deep hugs.

U: you were excited to go back to school after all our snow days. you seem very happy there, and I am so so glad about that. you worked hard making valentine's cards for your friends (and one for mama too!). you love any chance you have to draw or make art at school. you were so helpful and loving this week.

hikes with kids: Oak's Bottom, Portland.







 

One of our favorite walks around town is Oak's Bottom. It is one of our go-to places when we are feeling a little stir-crazy and want to be out in nature, but don't want to drive very far. It is a great spot if you are looking for a little hike where you feel safe with the kids running along the trail and exploring by themselves. There are no steep drop-off's and I feel comfortable with my 1 1/2 year old hiking ahead of me on her own. It is just a gentle stroll along a wetland, with fun small bridges to cross and a little creek to play in. It's a great spot for birders, so I recommend taking along a pair of binoculars for you and the kids.

There are several different access spots for hiking at Oak's Bottom. Our favorite is parking down by the roller rink, heading under the train bridge and hiking along the wetland there. It seems to be the longest continuous hike there that we have found. Sometimes we park up at the top on Milwaukie and veer off the paved trail to the left, to hike on a little path through the woods there.That's where there is a sweet spot with a little bridge over a creek where the kids like to play.

It is fabulous to visit in all seasons and fun to compare how the landscape looks throughout the year. I can't wait to head there in the spring and early summer to listen to the frogs and try to find some tadpoles!

U: You have been waiting for snow like this for years! You were so excited to be sledding down hills in the neighborhood, we have been having so much fun. You and Abba rode on the sled down the big hills to the grocery store.  

S: Not quite as excited about sledding, but you went down the hill a few times with mama. Mostly you wanted to chase the doggies and wave to them. Here you are searching for dogs in the rhodie bushes.

snow day!


We finally got some snowy weather here in Portland! We have been waiting for years for the snow to pile up here in town (the last time was when U was less than a year old), and it looks like maybe it will finally happen. School was let out early today and is cancelled tomorrow, so we have a long, snowy weekend ahead of us. I am hoping the snow will fall all night and tomorrow it will be deep enough to go sledding in the park. I stocked up with lots of good food at the grocery store this morning, so we are set. Looking forward to movies in bed, popcorn, sledding down hills, walking around the neighborhood, building some snow people, whipping up some snow ice cream , making some art with U, and spending some cozy time with my little family.

Friday: Crispy chicken wings with ginger soy glaze (from an old bon appetit) and roasted broccoli.

Also hoping to make some more slippery elm lozenges (similar to these) and some fire cider

I have been meal planning for a few years now. There are weeks here and there where I skip planning, but for the most part I spend about an hour one morning a week looking through recipes and making a list and calendar. I find it so helpful and it really reduces the stress of trying to throw a meal together last minute or making lots of trips to the store every week. I am hoping to share some our meal plans in this space here.

U: you climbed high up a mountain. we looked for pikas and marmots. you wake up early in the morning and draw in your room. you changed your sister's diaper and got her dressed all by yourself. you love taking care of her. you are a wild thing and i love you so. 

S: you want to listen to the song dayenu on repeat all day. tonight you climbed into the car and up into your car seat all by yourself; you started buckling yourself in and said "do it myself". you are so independent and oh so sweet.
